Christmas Table Inspiration Part 3

I'd seen a recipe for peppermint cookie sandwiches on Joy the Baker.  The looked amazing and sounded delicious.  I wanted to give my family a little Christmas favour so decided to make these.

Making cookies is messy business!

After cutting out large circles for the cookies we soon found we didn't have enough cookies to go around, which meant we re-rolled the dough and used a smaller cutter.

Hayley models the peppermint sandwich cookies beautifully!

After mixing, cooking, sandwiching and cooling all that was left was to put them in the bags I had prepared earlier, a la Blue Peter and set them out on the table.
